Steve, Simply no way for us to judge the quality of the metal. Unfortunately, your side of the world has a lot of counterfeiters. Anyone can make a roll stamp for ASTM and metal grades.
DVD is a good start.
As for the bending brake, it is possible to build a serviceable brake. I think there are plans on the 601.org website. Or you can come up with your own design. But for such a large project, it would be hard to go without one. You might try to find a local metal fab shop, and perhaps make a deal to make some production runs. Also (my opinion) I feel the V-press type brake is better than the conventional hinged for close work with multiple bends. It might be even easier to build your own of that type. You will need to make dies for each radius, make them interchangeable. Review your set of drawings before starting, be sure your building to the size you will need.
Lastly, I wanted to point out that no matter what, you will likely need to purchase the canopy kit from Zenair. Just about everything else is scratch build able, but that canopy is a real zinger. Plexiglas and composite construction, it would probably cost you at least twice the cost of the purchase from Zenair. Building a plug, getting the layups right, forming the glass, plus, there are no dimensions for this in the plans at all.

Thank you Pilot4pay for your usual response and advice. I think I better get my materials from Aircraft Spruce and I will search for the V press type brake.
